Lactobacillusdelbrueckii subsp. bulgaricus (bul.ga’ri.cus. N.L. masc. adj. bulgaricus, Bulgarian).

Strainsof this subspecies were previously referred to as L. bulgaricus . L. delbrueckii subsp. bulgaricus ferment glucose to D(−)-lactic acid and also metabolise fructose, mannose and lactose, but not sucrose [60, 61]. L. delbrueckii subsp. bulgaricus undergoes genome reduction which particularly relates to loss or silencing of genes coding for metabolism of carbohydrates [57]. Thegenome size is 1.76 Mbp and the G+C content of DNAis 49.9 mol%.

Isolatedfrom yoghurt and cheese and an important starter cultures in the production of these foods [58, 59] but also detected by culture-independent methodology in the intestinal microbiota of suckling piglets [54].
